Protein Pizookie Ingredients

Like the 1-minute protein brownie, we’ll be using pumpkin as a core ingredient for all three recipes. If you don’t want to use pumpkin or can’t find canned pumpkin, here are a few alternative ideas:

  • Butternut squash
  • Sweet potato
  • Bananas (mashed)
  • Avocados (will add fat, remove carbs)
  • Unsweetened apple sauce with a higher ratio of dry ingredients

Pumpkin works best but like 2017’s Super Bowl LI, I wanted you to know anything is possible.

In addition to the pumpkin, each recipe will have an added fruit/vegetable ingredient in either black beans or mashed bananas. Know that these can be substituted for as well. One thing I’ll touch on about the beans or chick peas (not used in this recipe) is that rinsing them and microwaving removes most of the bean or pea flavor. The recipes remind you to do this. Just remember to let them cool slightly or re-rinse them before adding the other ingredients.

For protein powder, the macros were calculated with Optimum Nutrition Gold Standard Whey. That’s my old faithful recommendation but any protein powder will work here.

Protein Pizookie Toppings

The real fun begins with toppings. I encourage you to take these recipes and run with them. The Twix pizookie, for example, could easily be turned into a Snickers or any other candy bar themed protein pizookie.

I recommend topping your pizookie with a lower calorie ice cream option. Halo Top and other ice creams in this genre come to mind but don’t feel obligated to use the “healthy” ice creams. You’ll see I’ve included macros for each pizookie with a 1/2 pint of Halo Top vanilla or chocolate, just for a reference point.

It’s also worth mentioning, these things are HUGE. So you may want to consider cutting the recipe in half if you’re eating it by yourself or removing pieces for later before adding the ice cream so the leftovers aren’t soggy.

A standard frozen yogurt or lower fat ice cream may work just fine. And there’s always the option of using a “nice cream” or fruit-based ice cream like these fourprotein ice cream recipes.

One final note here before we get to the recipes would be to make sure you’re accounting for things like candy bar crumbles and added chocolate chips. A healthy pizookie can easily turn into a high calorie pizookie if you’re not careful. One idea for chocolate syrup topping might be my Ultimate Protein Frosting recipe or simply sugar-free chocolate syrup. Okay, let’s get into the recipes.

I lied. One more thing. The recipes call for cast iron skillets, but you should be able to use any oven-safe skillet or even a baking dish. If you’re looking for a low-maintenance cast iron skillet, this is what I recommend.

Twix Protein Pizookie

A lower calorie, higher protein pizookie recipe.

  • 1 C (240g) Canned Pumpkin
  • 1 small (90g) Banana
  • 1/2 C (123g) Liquid Egg Whites
  • 1 1/2 scoops (45-48g) Protein Powder (vanilla)
  • 1 Tbsp (7g) All Purpose Flour
  • 3 Tbsp Stevia or 0-Cal Sweetener
  • 1 tsp Baking Powder
  • 1 Tbsp (14g) Chocolate Chips
  • 1 Tbsp (15mL) Walden Farms Caramel Syrup (or any sugar free caramel)
  1. Preheat oven to 350 degrees F.
  2. Blend all ingredients in a food processor or something like a Nutribullet until smooth. You can also mix the ingredients by hand if you mash the banana before adding other ingredients.
  3. For the full pizookie effect, add mixture to a 10″ cast iron skillet. If you don’t have a cast iron skillet, you can use any oven-safe skillet or even a small baking dish. Cook times may vary with other dishes, however.
  4. Add chocolate chips to the top of your pizookie. Bake for 25-30 minutes or until a toothpick or knife come out clean.
  5. Remove from the oven and cool for 10-15 minutes. Top with caramelsyrup and chocolate syrup or ice cream if you desire.

  • 3/4 C (184g) Liquid Egg Whites
  • 3/4 C (180g) Canned Pumpkin
  • 1/2 C (130g) Canned Black Beans (drained, rinsed, and microwaved for 2 minutes)
  • 1 scoop Protein Powder (vanilla)
  • 2 Tbsp (10g) Unsweetened Cocoa Powder
  • 2 Tbsp Stevia or 0-Cal Sweetener
  • 1 tsp Baking Powder
  • 1 Tbsp (14g) Chocolate Chips
  1. Preheat oven to 350 degrees F.
  2. Blend all ingredients except chocolate chips in a food processor or something like a Nutribullet until smooth. For the full pizookie effect, add mixture to a 10″ cast iron skillet.   • 3/4 C (180g) Canned Pumpkin
  • 1/2 C (130g) Black Beans (drained, rinsed, and microwaved for 2 minutes)
  • 2 Tbsp (14g) Coconut Flour (or 1 Tbsp All Purpose Flour)
  • 1 scoop (30-32g) Protein Powder (vanilla)
  • 2 T (10g) Unsweetened Cocoa Powder
  • 1 tsp Baking Powder
  • 2 Tbsp Stevia or 0-Cal Sweetener
  • 6-8 drops Red Food Coloring
  1. Preheat oven to 350 degrees F.
  2. Blend all ingredients in a food processor or something like a Nutribullet until smooth. For the full pizookieeffect, add mixture to a 10″ cast iron skillet.   • 3/4 C (180g) Canned Pumpkin
  • 1/2 C (130g) Canned Chick Peas (drained, rinsed, microwaved for 2 minutes, and re-rinsed)
  • 1 C (245g) Liquid Egg Whites
  • 1/2 C (52g) Graham Cracker Crumbs (or 3-4 large crackers, crumbled)
  • 1 scoop Protein Powder (vanilla)
  • 3 Tbsp Stevia or 0-Cal Sweetener
  • 1 tsp Baking Powder

Pizookie Toppings

  • 1 Tbsp Chocolate Chips
  • 2/3 C (30g) Mini Marshmallows
  1. Preheat oven to 350 degrees F.
  2. Blend all ingredients except chocolate chips and marshmallows in a food processor or something like a Nutribullet until smooth.
  3. For the full pizookie effect, add mixture to a 10″ cast iron skillet. If you don’t have a cast iron skillet, you can use any oven-safe skillet or even a small baking dish. Cook times may vary with other dishes, however.
  4. Add chocolate chips and half the marshmallows to the top of your pizookie. Bake for 25-30 minutes or until a toothpick or knife come out clean. The marshmallows on top should be slightly charred but be careful not to burn the cookie.
  5. Remove from the oven and cool for 10-15 minutes. Top with remaining marshmallows as well as chocolate syrup or ice cream if you desire.
