This easy Verde Chicken Soup Recipe is so flavorful and healthy too! Made with salsa verde, chicken and white beans a bowl of this soupis a tasty way to end a chilly day.

When I see the word “verde,” I think green and when I think green I think about Kermit the Frog singing “It Ain’t Easy Being Green” and then I smile. Green has always been one of my very favorite colors and when it comes to food, green = goodness. There’s no exception to that rule in this Verde Chicken Soup recipe. It’s light on fat and calories but not at all on flavor. Delicious! This soup is definitely easy—easy being green. I think Kermit would approve.

A few simple ingredients are all that is required to make this super tasting Verde Chicken Soup, and only in about 30 minutes. It’s the perfect soup to serve for a crowd and can easily be made a day or two ahead of time and then rewarmed, or begin preparing it early in the day and keep it stewing in a slow cooker until ready to serve. Garnish with sour cream, fresh cilantro, chives or Monterey Jack cheese, just to name a few.

A few soup making tips:

  • When making soups, stews or sauces, flavors of the spices used are intensified if they are toasted at the start. To do that all you’ll need to do is begin warming the oil in the pot, add spices and stir until fragrant. Easy and so worth the extra flavor. Plus I love the way it makes the house smell! It gets everyone hungry real quick.
  • This Verde Chicken Soup, like many others that include chicken, is the perfect place to used leftover grilled or roasted chicken, or pick up a rotisserie chicken at your local deli or grocer for quick prep.

    Hello
Id like to make this soup & am wondering what brand salsa verde to use

    • Amy Johnson

I don’t have a preferred brand of salsa verde. I use what I can find in our local grocery store.

I love this recipe! What other vegetable would compliment this for color? Would zucchini or sunmer squash work. The flavors are so fabulous I wouldn’t want to change them.

    • Amy Johnson

I don’t have a suggestion for adding color without changing the flavor. Maybe try garnishing it with something colorful? Like finely diced/sliced red onion, or red or yellow peppers? Or fresh cilantro? Sorry I can’t offer better suggestions.

FAQs

How do you add depth of flavor to chicken soup? ›

For a deeply flavorful chicken soup, get some boneless, skinless chicken thighs, season them, brown them in a skillet, then finish them in a 375 F oven. You can refrigerate them until you're ready to make the soup, then simply dice them up and add them to the soup at the very end.

How to make chicken soup juicy? ›

Here's my plan: add all the chicken parts to the stockpot, and gently cold-poach it until the breasts are perfectly cooked. Cold-poaching is a method I've used before to make the absolute best poached chicken breasts, ones that are completely tender and juicy, not tight and dry.

Why do you put lemon juice in chicken soup? ›

Lemons are a chicken soup game changer. Why? They brighten up and balance the salty, rich flavors of the dish, and make all of the ingredients come into line. Like a vinaigrette on a salad, the pickle on a burger, and the sour cream in a coffee cake, a squeeze of lemon gives chicken soup a game-changing brightness.

What part of chicken makes the best soup? ›

The Best Chicken for Soup

Buy bone-in thighs if you can; the bones make the broth even better. (You can use chicken breasts if you like, though I still suggest using bone-in.)

What gives soup the best flavor? ›

Herbs and spices add aroma, flavor, and intensity to soup broth. "Use fresh or dried basil in tomato-based recipes or fresh parsley to add freshness to clear broth soups," says Sofia Norton, RD. You can also go with more heat and spices.

What can I put in my soup to make it taste better? ›

Perk up a Bland Soup With Simple Pantry Staples

Add a splash of vinegar (any kind!), or a squeeze of citrus. Chances are, you could use a little more salt. Go ahead—it's ok. Salt perks up flat flavors and helps balance out bitter-tasting ingredients.

What thickens chicken soup? ›

Add Flour Or Cornstarch

You can thicken soup by adding flour, cornstarch, or another starchy substitute.

Do you simmer chicken soup covered or uncovered? ›

Place chicken, carrots, celery, and onion in a large soup pot; add enough cold water to cover. Bring to a boil over medium heat; reduce heat to low and simmer, uncovered, until meat falls off of the bone, about 90 minutes. Skim off foam every so often, as needed.

Why does my chicken soup have no flavor? ›

Ensure you've added enough salt and black pepper. Too little salt means your soup's flavors will remain hidden. When you know your soup is salty enough, move on to other seasonings like herbs and spices.

Why do you put vinegar in chicken soup? ›

Whether it's white wine or vinegar, a touch of acid added to the simmering pot will create a richer finished product. That's because acid helps break down the cartilage and other connective tissues in the bones of the chicken, which helps speed up the formation of gelatin in the stock.

Why add vinegar to chicken noodle soup? ›

While adding vinegar won't reduce the amount of sodium in the pot, the sharp tang of this condiment can help equal out the salty flavor on your tastebuds, masking the brininess of an oversalted soup and making it easier to eat.

What can I use instead of lemon juice in soup? ›

When cooking savory dishes, lime juice and orange juice make a good substitute for lemon juice. Replace the lemon juice with lime juice in equal amounts (e.g. 1 teaspoon for 1 teaspoon). Or, you could substitute the lemon juice with half as much white wine or white vinegar.

Does chicken soup taste better the longer you cook it? ›

While broth and stock both get richer and richer the longer you cook them, the problem is that the chicken meat will dry out and get tough if you let it go too long.

Can I put raw chicken in soup? ›

We first make the stock and later add the raw chicken meat to cook near the end of the soup-making process. You could also cook the breast and thigh chicken pieces whole, in the broth, and remove them after 15 minutes of cooking or so, cool them and shred them to be added at service.

Should I use chicken broth or stock for chicken soup? ›

A good broth is the secret to the very best soup, such as chicken soup and beef and barley, while a rich stock is the foundation for superior braises, stews and sauces, including French classics like demi-glace and sauce Espagnole, as well as the very best turkey gravy.

How do you make soup taste deeper? ›

Sear before you simmer.

Browning your ingredients on the stovetop or in the oven creates deep, savory flavors that you won't get from simply adding those same ingredients straight to a pot of water. Take our Double-Dark Chicken Noodle Soup recipe, for example.

How do you fix tasteless chicken soup? ›

Herbs add a fresh note to a bland chicken soup. Add a sprig or two and let them steep as the soup simmers for 10 to 30 minutes, or chop the herbs and toss them in for near-immediate color and flavor.

How do you create depth of Flavour? ›

These elements: salt, fat, acid, and heat all add a unique layer of flavor to a dish. Salt not only makes foods taste saltier, which we humans enjoy because it's essential to our diet, but also enhances the flavors of other elements in a dish (i.e., adding salt to cookie dough enriches the overall cookie).

How do you get depth in soup? ›

Craft a symphony of flavours with a diverse array of herbs and spices. Fresh herbs like cilantro, basil, or mint can elevate your soup, while spices like turmeric or smoked paprika add intriguing depth.
